Toruko-fu Rice (1,200 yen) arranges the original toruko rice (a local semi-Western style dish which serves spaghetti, a deep-fried pork cutlet, and pilaf in one dish) created by the owner-chef’s father with French techniques. While truly reproducing the original, a French flavor is added with the pilaf flambéed with white wine, the cutlet sautéed with butter, sauce simmered with red wine, and Nagasaki-style spaghetti created in the image of the first pasta in Japan.
