While reproducing the original,a French flavor is added to create a graceful dish.

Toruko-fu Rice (1,200 yen) arranges the original toruko rice (a local semi-Western style dish which serves spaghetti, a deep-fried pork cutlet, and pilaf in one dish) created by the owner-chef’s father with French techniques. While truly reproducing the original, a French flavor is added with the pilaf flambéed with white wine, the cutlet sautéed with butter, sauce simmered with red wine, and Nagasaki-style spaghetti created in the image of the first pasta in Japan.

Hajime Uehara, the owner chef. As a Nagasaki-Western Food Meister accredited by Nagasaki Prefecture, he is working to disseminate the Western-style food of Nagasaki.

Bistro Bordeaux is a noted restaurant of toruko rice, but it is also a French restaurant where you can taste decent French food casually. Be sure to also taste the wines specially selected by Mr. Uehara in this comfortable restaurant.
