The well-known gourmet items from a city of food, Taipei, have astonishingly evolved!

One of the enjoyable things of traveling in Taiwan is the variety in its food culture. We’d like to introduce an evolution in the flavors of Taiwan’s delicious cuisine. Colorful xiao long bao that entertains our eyes, fluffy shaved ice, beef noodles made with high-quality beef served rare, and other delights will change what you thought you knew about Taiwanese gourmet dining with their sophisticated arrangements.

Two major local Taiwanese specialties are fused in one dish.

A representative “soul food” of Taiwan, beef noodles, are combined with an element of beef soup, a local specialty of Tainan, to create this Tang shuang wu ku niu hsiao pai mien (370 yuan). Noodles topped with plenty of rare marbled beef and steaming hot soup with a light and salty flavor is prepared right in front of you. You can taste the freshness better when you’ve seen the meat cooked in-person. Sprinkle on some rock salt to bring out a more robust taste.

A noted restaurant of xiao long bao known to the world created Tsai se xiao long bao (435 yuan), so that guests can enjoy a variety of flavors. The dumpling skins and fillings are flavored only with natural ingredients such as black truffle, shrimp, and Taiwanese basil. The 7 pieces of xiao long bao are placed in a circle so that the taste becomes stronger in clockwise order, starting from a “regular” flavor in the upper left. High-quality Taiwanese black pork is used in the filling and soup, and all of them taste wonderfully juicy. When you open the lid and see the colorful pieces of xiao long bao, they will make you feel happy, even before you get to taste them.
