Aburasomen noodles (700 yen including tax) are popular in the Amami area as a dish in the “home cooking” style. At this restaurant, established 28 years ago, they add their original soup for chicken rice to somen noodles to create a pleasantly mild flavor. It’s a filling dish with lots of ingredients such as pork rib, onion, mushroom, and carrot. A subtle flavor of small roasted dried sardines adds depth to the taste.

A local sweet handed down in Amami Oshima, Kashamochi (700 yen/ 10 pcs including tax), is made by traditional methods at a long-established Japanese-style confectionery. High grade rice powder, mugwort, and muscovado are kneaded to create its light sweetness and springy texture. It is steamed with Kasha leaves (a plant in the ginger family), which creates the delicate aroma you smell after biting into it. Plenty of nourishing mugwort is used as well, making this sweet gentle for your body, too.

This specialty restaurant serves Shimatofu, soft tofu made using groundwater and bittern from Amami. Shimatofuya-teishoku (1,700 yen, tax not included) is popular among many other items. It includes many side dishes such as Tempura of bean curd skin, croquette of bean curd lees, and peanut tofu. In spite of its volume, it is also popular among women because it is so healthy.

A creative dish from a popular izakaya restaurant that is suitable for eating after drinking.

Unagi-no-sanen-mushi (500 yen) is served as a dish to eat after drinking by the izakaya, which specializes in the island’s cuisine and is popular among locals. It is domestically produced eel and rice with a specially made sugar and soy sauce steamed with shell flower leaves (sanen in Amami dialect). This flavorful item with the soft aroma of the shell flower, a relative of ginger, matches well with the muscovado shochu spirits served at the restaurant!

A representative local cuisine of Amami is arranged into a modern dish.

A “soul food” of Amami, Chicken rice (1,000 yen including tax). The founder re-arranged the traditional chicken rice, which is typically rice boiled with ingredients, with the addition of a chicken soup in 1946. The essence of the whole locally-raised hen is condensed in the soup. You eat it by pouring it on rice topped with the other ingredients, including the soft-textured chicken meat. The aroma of locally-produced citrus peel used in the topping adds a fresh flavor.
